Since retiring from my nursing career as an RN, I have lots more time to play with my crafts. I live in Southwest Florida with my husband and I love just about all crafts and decorating. I love to share my experiences some good some not so good in my craft rooms. Come along and craft with me, cook a favorite recipe, decorate or just have fun.
Come Cook With Me: Roasted Corn and Orzo Pasta Salad

Dressing
1/4 cup olive oil
2 Tbls. Red Wine Vinegar
1 Tbls. (or to taste) Lemon juice
Mix well
Salad
1 tablespoon coconut or olive oil
▢3 cloves garlic minced
▢1 lb of frozen corn or 2 cups of fresh cooked corn
▢1 pint of cherry tomatoes
▢½ lb of orzo pasta
▢¼ cup olive oil
▢¼ cup fresh basil chopped
▢2 tablespoon red wine vinegar
▢1 tablespoon lemon juice
▢salt and pepper to taste
Directions
Cook Orzo pasta according to package directions. Drain and set aside to cool.
Add 1 tablespoons oil to a large skillet, add garlic and saute over medium-high heat,and cook for about 3 minutes.
Add corn and saute 3 more minutes.
Remove from heat and let cool.
In a large bowl combine orzo, tomatoes and basil stir well.
Then add in cooled corn and garlic mixture
In a medium bowl, combine ¼ cup olive oil, vinegar, lemon juice, salt, and pepper. Stir to combine.
Pour dressing over salad and toss well.
Serve at room temperature.

Many ways to store garlic. You can peel, place whole clove in airtight bag or container. Date and freeze up to six months. Or, you can chopped it and portion into ice cube tray. Then once frozen, place garlic cubes in airtight bag. Use as needed. Or there are recipes online for garlic infused olive oil. I am Italian but have stomach issues that prevent me from consuming garlic but I make the infused oil which gives me the flavor but I strain out the garlic. The flavor is light.
